We have a workflow with a form that is been sent to the manager and we would like to stop the submission reminders in order to not receiving this emails.

Have you gotten an example email that was sent out and compared it with the Email Templates? That is where I would start to look to figure out where the email is being sent.
It is a form step in workflows sent that by default if you dont configure it it just sends the link to the form once again
