I think ideally you could pass the complete requester, recipient, authorizer and access item data to the email template and expose them all. Something like the following could then be referenced:

authorizer.attributes.title
authorizer.attributes.company
requester.attributes.country
requester.attributes.company
accessitems[0].attributes.description
