Picklist configuration is a bit tricky. If you have very less data and you already getting code from account attribute, you can use lookup transform to change code into text.
I suggest you to check with your SuccessFactors team, they will provide the picklist values. It is recommended to use and get the data you need instead of aggregating all the information from SuccessFactors.
Once we asked SuccessFactors team to share us the data dump, form there we filtered out what picklist we need.
