Can you please advise how to check when the VA was last updated by SailPoint for patches and when is it scheduled for next patch?
What is the update policy and release frequency?

I don’t think that you can see all these details and it is fully controlled by SailPoint. They update the VA whenever they make any improvement to the VA image. You can refer Managing Virtual Appliances - SailPoint Identity Services for more details.
Please check with OS admin when OS patch is done
its difficult to get the schedule but you can follow the latest stable release and see where your VA is at.
your VA release info : cat /etc/os-release
Flatcar release info : Releases | Flatcar Container Linux
if you think your VA needs an update :
get the stunt latest file (always get the latest as the todays file may not be updated with versions or other info few days/weeks/months later) :
wget -O ~sailpoint/stunt.sh https://raw.githubusercontent.com/sailpoint-oss/colab-stunt-script/main/stunt.sh
update it manually one at a time in the cluster :
bash ~sailpoint/stunt.sh -u
