some connectors have already configurated Disable operation(like AD), for the others you must set a provisioning form into the connector for each operation that you want see/manage

The process to disable an account can be found in the Manage Accounts section. Upon selecting an identity, you will be presented with a list of associated accounts and the options to disable/enable, or delete them.
And as @enistri_devo commented, for proper functionality, the provisioning policy must be appropriately configured in the application.
