We are trying to provision email address using the Cerner connector. The documentation at Account Attributes does not mention any email address attribute in the Cerner account schema. Could anyone provide feedback on which attribute should be used as the provisioning target for this?

I have not worked on this source before, but assuming there is an ‘email’ attribute on the source itself, you would need to add it to your Account Schema in ISC.
Can you try confirming the field name on the source (email or email_address for example), adding it to the account schema, and running an account aggregation to see if this allows you to pull the data in? If you are able to pull data in, then you should be able to add this attribute to your create provisioning plan and have it populated with whatever attribute from ISC.
